The Farmer

At the beginning of the year, I was so pleased to see a commercial, produced by the Land O’ Lakes company honoring the farmers of this land.  As a text, they used one of my favorite poems by Amelia E. Barr, entitled simply, The Farmer.  Today is National Farmer’s Day. Stop and think where we would be without farmers.  Many romanticize about the ‘simple life’ that is farm life.  Although there may be a beauty and connection to God, the elements and the earth that comes with farming – there is nothing simple about the simple life.  I have included the poem below.  Please take time to read it – and pray for the good people of this land who day after day, year after year, plant the seed, tend the farm, and raise our food.  (All photos by others)

The king may rule o’er land and sea,

The lord may live right royally,

The soldier ride in pomp and pride,

God shed his grace on thee . . .

It’s officially summer on the Homestead.  The girls are here, the days are full, and so is grandma’s heart.  With the addition of the littlest mermaid this year – summer gardening has come to a near halt – but to see the joy in the face of this little mud muffin – it’s all worth it.  There will be other years, other gardens – but this day will never come again.  So here’s to America, summer, apple pie, homemade ice cream, mud muffins, and next year’s garden.

2017 has been an interesting year for us.  The year began with the passing of my dad. The return of health challenges for me – and Dave taking work out of state have rounded it off to this point.  In between, there have been trips to be with family,  a house full of guests, weddings and events to host, planting, weeding, pruning, baking, weeding, mowing, weeding. . . . If there is anything I have learned during my life, it is that life is made up of a series of changes.  Each day, each moment brings it’s own unique events and opportunities. . . and while there are times that are easier than others, each day brings us the chance for growth, joy, and expressions of gratitude – even the hard times.  None of us will escape hardship, heartache, or difficult times . . . .  the secret to a happy life is to recognize that God loves us enough to give us opportunities to grow – and embrace the gift. . .

. . . . And that brings us to summer.  It is here already.    The winter and spring rains and cool temperatures have given way to heat and humidity – and I am trying to find the joy in that.  In a few days, the loves of my life – my four young granddaughters will descend upon the Homestead for the summer – a day that they (and I) have been looking forward to all year.  There will be laughter, giggles, hugs, snuggles, campfires, movies under the stars, dinners cooked over the fire pit and under the sun.  There will be homemade ice cream in many flavors (I’m betting Candy Cane is their first request), homemade bread, many, many, many batches of cookies, pancakes and oatmeal (porridge is the 6 yr old’s favorite food), lots of salads and a truckload of watermelon; berries, peaches, apples and pears from the orchard – and – I have seen blooms on the ‘cookie trees’ this year.

I am sure that there will be lemonade stands and bake sales.  There will be chalk art on every inch of pavement.  Chicks will hatch under very careful supervision.  All of the young chickens will have names, and most will be performing in the annual chicken theatrical performances.  There will be tree swings, bicycle shows, flashlight hide-and-seek, and the annual watching of grandma and grandpa’s meteor shower.  Somewhere in the middle of all of this there will be weddings, showers, family visiting for summer vacations and a trip or two to the ‘magic kingdom’.

There will be jars of grasshoppers, caterpillars, beetles, and every manner of creeping thing – on the nightstands.  There will be swimming, sand castles, sunburns and very tired girls (and grandma). . . . but most of all there will be love – for that is the key to a happy life.  To love, and be loved – unconditionally – is the essence of true joy.

Whatever your summer brings – find joy.  Make memories with those you love – and find joy.

The Homestead is ‘Going Solar’

I have been blessed beyond measure with having many amazing people in my life!  One of those blessings is my friend, Leslie (she’s the gorgeous one on the left).  I love her like a sister!  She is one of those people, that, well, all I can say is  – everyone needs a Leslie in their lives!

Several weeks ago, I stopped by her house to pick up some things that she had set solar-oven-pumpkin-breadout for me.  Imagine my surprise when I found this delectable little delight among the things she had waiting for me.  A delicious loaf of pumpkin bread – baked in her solar oven.  It was moist and perfectly baked – and had she not indicated that she had baked it in her solar oven, I would never have guessed.

She is, in my mind, the master of the solar oven. . . and has graciously consented to share some of what she has learned with me (because thanks to her inspiration I am now the owner of a solar oven) – and, she has given me permission, in turn, to share with you.  So, today, we begin a series of posts – on the use of a solar oven.

Happy Pumpkin Spice Season!

With the onset of fall, the grocery stores are stocking their shelves with everything pumpkin!  A recent trip to the local Trader Joe’s store found my grocery cart filled with all kinds of seasonal goodies.

trader-joes-pumpkin-cereal-boxOne of the items that I picked up was Trader Joe’s Pumpkin O’s, a pumpkin flavored breakfast cereal.  Although it was good as cereal, it didn’t take me long to figure out what I wanted to do with it.

When our youngest was studying in Baltimore, we became acquainted with what soon became our favorite breakfast place – The Blue Moon Cafe.  This tiny restaurant – truly a hole-in-the-wall – served up the best breakfast in town.  Their signature dish was something they called “Captain Crunch French Toast”.  It was good enough that after eating it, my father, a man of few words, exclaimed  “I would come back to Baltimore for this!”

pumpkin-cereal-french-toast1After tasting this cereal, I knew that it would make a perfect coating for my version of this Baltimore treat. . . . and it did not disappoint.  Golden, crispy, mild pumpkin and spice flavor . . . . It was a real winner.

The recipe is simple – but greatly enhanced by using pumpkin butter in the egg mixture.  Warm maple syrup makes a perfect topping – but if you can find some spiced apple cider syrup to top it with. . . .

What’s that?  You don’t have a Trader Joe’s in your area?  Not to worry.  Sprouts Marketplace carries the same cereal.  Theirs is called Pumpkin Loops.  Wherever you find it, the cereal is seasonal – only on the shelves for a short time. . . so you will want to pick up a few boxes before they disappear.

Pumpkin O's French Toast

This is a delightful breakfast treat - French Toast coated with crushed, pumpkin spice cereal. It was inspired by a French Toast made at the Blue Moon Cafe in Baltimore, Maryland. Pumpkin flavored cereal loops can be found at Trader Joe's or Sprouts Marketplace.

Servings 2 people

Ingredients
  

  • 4 slices thick sliced bread (Texas Toast, Brioche, Sourdough)
  • 3 large eggs
  • 1 tablespoon milk or half and half
  • or
  • 1 heaping tablespoon Pumpkin Butter
  • 2 cups Crushed Pumpkin Flavored breakfast cereal O's
  • butter
  • Maple Syrup

Instructions
 

  • In a food processor, or using a rolling pin, crush enough of the cereal to yield 2cups of crumbs (leaving a few larger pieces). Set aside.
  • Crack the eggs into a shallow bowl or pie plate. Whisk the eggs until the yolks and whites are thoroughly combined. Add the milk, half and half, or pumpkin butter. Whisk to combine. Set aside.
  • Place ½ cup of the crushed cereal onto a plate or into a pie pan.
  • In a non-stick skillet, melt one tablespoon of butter over medium heat.
  • Dip one slice of bread into the egg mixture, allowing the mixture to soak into the bread for a few seconds. Turn the bread over and repeat on the other side.
  • Place the egg-dipped bread onto the cereal crumbs. Press lightly. Turn the bread over and repeat on the second side, pressing into the cereal crumbs. Gather any extra crumbs and sprinkle over the coated bread, pressing as necessary.
  • Place the dipped and coated bread into the melted butter and cook until golden brown.
  • Turn the bread over and cook on the other side, adding butter as needed to allow for a golden crust.
  • Serve warm with butter and warm maple syrup, or for a real treat, warm apple cider syrup.
  • Serves 2

Here’s what’s Happening on the Homestead

Spring.  Just the word congers up images of blossoms and bunnies, eggs and chicks. . . . and catalogs filled with tableware, linens and all the fresh spring color imaginable. . . . so when my spring edition of the Pier1 catalog arrived – I was immediately drawn to devour every page.  The dinnerware, table settings, linens were, in typical Pier1 form, a wonderful feast for the eyes. pier1-catalog-page

But, there was one thing that especially drew my attention. . .their adorable folded napkins – especially the little bunnies in the upper right corner of the page. The catalog directed readers to log on to their website for instructions  – which I immediately did.

Upon arriving at the page, I  searched for the Bunny Fold pier-one-bunny-ears-directionsand found this.   I grabbed some cloth napkins (which happened to be from Pier1) and, following their directions, began folding.  It only took me to the 4th step to figure out that there was a real problem with the directions – they were rolling from the wrong side of the napkin. . . and by the final step – it was unmistakable.

wrong-way-bunny-napkinI had created this.  I took an unfolded napkin and the directions to my husband – who, as a builder, reads instructions for a living  . . . and his response was immediate – these are not right.  They have rolled from the long side and not the point – and used directions for a granny knot.  It needs to be an ‘overhand’ knot.  (50 plus years of scouting – he should know his knots!)

After making a few simple changes – rolling from the point and using an overhand knot – the finished product looked like the one in the Pier1 picture.  Success!    folded-bunny-napkin-perfection

 And so, as much as I LOVE Pier1, no one is infallible.  I have done my own set of instructions, including pictorials, for your use should you be wanting to try these little treasures.  Such a simple way to dress up a spring  or Easter table.
